FSAAI stand for Food Safety and Standards Authority of India. The license given by this licensing authority will called FSSAI License or in general terms Food license. This license is required to be obtained by all those business organizations who are directly or indirectly dealing with food. This authority keep their eyes on those entities to whom this act apply whether they follow the general principles under this act or not. Their endeavor is to achieve an appropriate level of protection of human life and health and the protection of consumer’s interests, including fair practices in all kinds of food trade with reference to food safety standards and practices. In cases where there are reasonable grounds to suspect that a food may present a risk for human health, then, depending on the nature, seriousness and extent of that risk, the Food Authority and the Commissioner of Food Safety shall take appropriate steps to inform the general public of the nature of the risk to health, identifying to the fullest extent possible the food or type of food, the risk that it may present, and the measures which are taken or about to be taken to prevent, reduce or eliminate that risk. Thus, it become most important for entities to get clean report from this authority. This license is given under Food safety and standards act-2006.

Who should take it?
All the businesses which are specifically dealing in the business of procurement, Manufacture, distribution, processing, packaging and storage of food or any food related item. Apart from the above all the hotels, restaurants, wholesalers, food chains, dairy and dairy processing units, food importers and exporters, processors of pickle and dry fruits makers, suppliers of raw materials for food products, transporters of food items ready to eat food manufacturers and processors are required to avail food license.
Who should not take it?
petty manufacturer who himself manufactures or sells any article of food or a petty retailer, hawker, itinerant vendor or a temporary stall holder or small scale or cottage or such other industries relating to food business or tiny food business operator
categories of Food license
There are three categories of this license. You are required to categories yourself in any of this categories and apply for that category license.
1) Regular license: Applicable to those whose annual turnover do not exceed 12 lakhs.
2) State license: Applicable to those whose annual turnover ranges between 12 lakhs to 20 Cr.
3) Central License: Applicable to those whose annual turnover exceeds 20 Cr and those who wants to export or import any food related items.

Which are the documents needed for food license & what is the validity of the food license?
You need following documents for applying food license:
1) Identity proof and address proof of applicant.
2) Passport sized photo
3) IEC (Import export code) for central or state license application.
4) A list of directors or partners
5) A certificate of incorporation
6) The MoA and AoA of the business
7) No Objection Certificate from the local municipality
8) For manufacturing units, besides the above-listed documents, the following are also required:
The blueprint of warehouse, plant, etc.
A list of all machinery
Report of a water test

The validity of food license largely depend upon its category:
1) Regular license remain valid for 1 Year.
2) State license remains valid for 5 Years.
3) Central License remains valid for 5 Years.
